Applesauce Cookies (Diabetic)

Yield: Makes 4 dozen cookies

1 3/4 c. cake flour
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. cloves
1 tsp. baking soda
1/2 c. butter
1 Tbsp. Sucaryl solution
1 egg
1 c. diabetic applesauce
1/3 c. raisins
1 c. all-bran

Sift together the flour, salt, cinnamon, nutmeg, cloves, and baking soda. Mix butter, Sucaryl, and egg until light and fluffy, then add flour mixture and applesauce alternately, mixing well after each addition. Fold in raisins and all-bran. Drop by level tablespoons onto greased cookie sheet, about one inch apart. Bake in a moderate oven, 375 degrees, for 20 minutes or until golden brown.
